Baked chicken or grilled chicken just tastes plain and dreary. Chicken salad or chicken grilled with barbecue sauce may taste a little better but I guess you will still be bored with this menu.

I started to experiment with rubs when I grilled or baked a chicken 20 years ago, I'm happy to report that my relationship with chicken got better except now the chicken was in danger of being eaten quicker by me and my buddies.

The secret is to add a barbecue-chicken-rub to your chicken the evening before you are going to cook your chicken on the grill. The spices in the rub make all the difference on how you look at chicken for a meal.

Basic Barbecue-chicken-rub


This is a dry rub that is spicy getting its heat from chili powder and cayenne powder. If its to hot for you just levee out the cayenne powder.

Ingredients you will need chicken cut in eights

4 tablespoons of chili powder 2 tablespoons of garlic powder 2 tablespoons of onion powder 2 tablespoons of dry mustard 2 tablespoons of black pepper 1 tablespoon of 5 spice powder

Mix all these ingredients together and coat the chicken in them leave chicken pieces overnight in plastic closed dish in the refrigerator or a plastic zip lock bag.
Proceed to get your grill on medium heat and place chicken with tong on the grates.

This is a rub I used to impress my dates in Arizona. When I grill chicken with the below rub they never stop talking about how good it is . So you need to try it and let us know what you think. Spicy Rub Ingredients

1 cup chili powder 1/4 cup cayenne powder(if you want it hot) otherwise skip

1/2 teaspoon ginger

1/2teaspoon black pepper

1/2 cup onion powder

1/4 cup garlic powder

1/2 teaspoon allspice

Mix everything together and store in a glass jar.
