Barbecue-chicken is best done on the grill with a dry rub.
I like to use chicken cutlets on the grill also.
Spicy grilled chicken is easy to make on a charcoal grill.
Here are the ingredients:

seasoning for rub
For this recipe their are different rubs we can use or we can grill it plain. I prefer using a dry rub on everything that is meat. Life is to short not to have spice in your life.
The mexican people have a great saying-if you're not crying when you eat (because of the Spicy food) then you are not eating!
NOW on the charcoal you can throw one or two water logged hickory chips for some smoked flavor.
Spicy Rub Ingredients
1 cup chili powder
1/4 cup cayenne powder(if you want it hot) otherwise skip
1/2 teaspoon ginger
1/2teaspoon black pepper
1/2 cup onion powder
1/4 cup garlic powder
1/2 teaspoon allspice
Mix everything together and store in a glass jar.
Rub the chicken pieces with thin layer of rub. now we will start
grilling-chicken.
Get the fire going on the grill
When you have a hot fire going and the coals have been coated with white ash.
Place Mr.chicken on the grill.
Watch the bird closely chicken only needs 4 minutes a side just like steaks! You should never need more then 5 minutes a side with a hot fire going. Always check with your probe thermometer for if its done-go to the cooking temperatures page.

I like everything he does but I would not leave the chimney unsupervised near the grass. Maybe I'm paranoid because here in the Arizona desert everything is always so dry that a single spark can set your lawn on fire.
Believe it it happened to me-so I'm very careful with the chimney and I always have a hose ready to spray some water if something would catch fire.
Here in Arizona everything is dry or bone dry except during the monsoon season in the summer where we get a lot of thunderstorms.
I usually keep the chimmney inside the grill or inside the smoker when its heating up. I'll use a little newspaper and a match to get the coals lit but only a little paper so the sparks don't fly away. My cat is bothering me to pet her while I'm writing this.
