My Easy Barbecue-rib-recipes on the smoker for cooking-ribs









Okay you have come to the right place to learn the secrets of cooking-ribs on the smoker. How to do basic baby back ribs or regular ribs. There are many rib-recipes out there and I will give you a basic one for the beginner which is great for pros also.

Ribs to buy-I like the hormel baby back ribs and buy them when they are on sale-I store them in the freezer. Always try to buy bulk ribs because its cheaper and when cooking-ribs you can never have enough!

You will need a barbecue smoker and the accessories listed on my page on barbecue tools. Very important to have the thermometer,apron,and mitts.

Charcoal pointers-Do not ever use charcoal that has the quick starter fluid build in-It make everything taste bitter. I need to keep telling beginners this point!

Stick to basic charcoal-No mesquite or hickory embedded brickets

Just plain charcoal and use a chimney to get the charcoal on fire

I find charcoal cheapest at Sams Club or Walmart's.

These barbecue-rib-recipes is good for beef or pork ribs.

How To Use the Rub-Big Als Basic Rub for Ribs

What is a Rub-A rub is a mixture of spices that you rub on the meat before cooking preferably putting it on the night before-you can make it yourself..

1.Rub or no rub-its up to you.I make a quick basic rub by mixing equal parts of chili powder,black pepper,and garlic and onion power and paprika.You need to experiment with different proportions of these spices and see which you like best.

4.My recipe for a rub-its right below

Get a big bowel:

mix some

1.black pepper-1/4 of a cup stay light on the pepper

2.paprika-3/4 of a cup Hungarian paprika is spicy when the Spanish paprika is sweeter

3.chili powder-1/2 cup

4.garlic powder-1/3 cup

6.Optional-some brown sugar-1/4 cup stay light on the sugar

7.Want it hotter?Mix and a tablespoon of ground cayenne pepper or red pepper ground to the mix but I usually add my hot stuff to the sauce see my sauce page

This rub is a basic rub good for all meats-I usually throw everything together and do not use measuring cups-thats just the kind of person I am.

You will need to experiment with the above formula and see what you like best.

Mix all together then coat the ribs on both sides-let it sit in the refrig for as long as needed prior to cooking.

Do the rub mixture the night before you want to BBQ. What I do is when I take the ribs out of the plastic they came in-I wash off the juices they came in with water and in a squeaky clean dish I coat the ribs on both sides with the rub. Leave the ribs coated with the rub in the refrigerator.

Get the smoker up to temperature 200 degrees

You have your water pan above your white hot charcoal coals.

If you want add some Dr.pepper to the water pan with the water. it will give it a good flavor to the ribs How much 1/2 a can-This is optional try it and see if you like

Place the ribs on the top and bottom racks and close the lid

Add 5 water logged Hickory chips to the charcoal to make smoke

Open the charcoal view door wearing your protective mitts and throw 5 water logged hickory chips on the charcoals and close the door.

Go away and drink a beer or watch some television or play with the dog and come back in 2 hours and check the water pan and make sure the coals are enough every hour throw another 8 charcoals in that charcoal pan.

Check the temperature every 2 hours on the top of your smoker also

In around 5-8 hours your ribs will be ready-thats it ....Sweet and easy.

I really like these guys and their video on cooking ribs on a grill.

I suggest cooking ribs only on a smoker its easier and you can go away for two hours once the smoker is going-go have a beer hang out with the cowgirl.

But for those of you who insist on using a grill here is a good video from another barbecue master. He tells you that you got to stay with the ribs... Thats why I use the smoker.

Want to cook great ribs tonight?

Well then go get the smoker if you don't have one..In the end it will be cheaper then going to a restaurant.

20 dollars for a rack of ribs at the restaurant and 10 at the grocery you cook it on the smoker for 40 percent less- i figure the coals and your time are worth 10 dollars.
