hummus the recipe

Hummus is a good bbq side from the middle east.I ate this extensively with grilled lamb back in the 1980s when I was stationed in the Middle East. It is an excellent side dish combined with tehina and can also be enjoyed by itself as a meal

So you want to ask me what is chummus also known as hummus. This is the middle east staple made of cooked chickpeas know as garbanzo beans mixed with, olive oil ,garlic and tahini sauce,and lemon juice. There is also mixed in with certain Middle Eastern spices including cumin and paprika.

When I went to medical school in the Middle East I used to go after my orientation to the local grocery I did not know at the time what was hummus or tahini sauce. I just looked in the deli section in the grocery as I could not speak the language I just pointed at whatever others were buying and so people buying this white sauce and is gray white thick sauce so I copied them.

I also saw them buying this red salad which started out to be Turkish salad which is still today one of my favorite appetizers that is made out of red peppers, onions, and garlic and olive oil.

Buying the ingredients

Most groceries carry canned chick peas and today also carry tahini sauce or concentrate where you add water to make it into a sauce its very simple to do.

if you have a middle eastern grocery near you you can get the ingredients there and pick up some pita bread which is delicious heated up and stuffed with chummus and salad such as tomatoes and onions.


this is an easy recipe to make as well as a pleasure to eat. It can be ground by hand but a blender or food processor will make it much faster. You are going to blend the chick peas with all the other ingredients.

Chummis goes well with grilled lamb,shish kebab as a side dish as well as in pita bread with a salad.

In the middle east fast food restaurants they will give you a pita and as long as you have the pita bread you can stuff it with salad,and falafel and chummus and tahini sauce.

Making chummus the recipe

need a blender or food processor

2 cans of cooked chickpeas drained

1/2 cup tehina sauce

1 teaspoon of paprika

1 teaspoon of cumin

3 cloves crushed garlic

1/2 cup olive oil

1 tablespoon of cilantro or parsley

1/2 cup of lemon juice mix everything together and put it in the bowl chop up the parsley or cilantro and then sprinkle a little more paprika on top of the chums. Then serve it with hot lamb chops as a side or in your favorite pita bread.
