Have you ever heard of schwarma? This is a middle eastern grilled meat that is mainly made of lamb but chicken, turkey, beef, and goat meat is also popular that is marinaded with spices and then cooked on a rotisserie that spins it around.
It is said to have origins in Turkey with doner kebab another grilled meat that I love .It has become a grilled fast food in the middle east.
It is usually served in a pita bread with various sauces such as tahini and vegetables such as onions,tomatoes and cucumbers,Then the fun part begins because various fast food grill restaurants have many different sides in many different sauces to choose from.
You could spend the day tasting the very spicy and hot chili sauces that are found in the Middle East. Different regions may add some different spices but for all essential purposes this grilled dish is enjoyed the same in each country in the Middle East.
If everybody could get along the way they enjoy eating this grilled meat then the world would be a better place.
How I learned about this grilled meat-in the 1980s I spend several years in Asia and the middle east where I was exposed to the wonderful cuisines there, I immediately fell in love with thai cooking and middle eastern cooking especially the grilled meats of the middle east . I love lamb dishes.
I ate schwarma one time while touring in Turkey where I was dressed as native In the remote region with a guide who took me to a local place east of Ankara in the middle of no where.
That is the kind of places I like to eat at. It doesn't matter where in the world I eat I always enjoy to eat where the locals go and it has to be a dive where stuck up people don't come. In other words I like to be where hard-working people are eating who know that this food serving this restaurant is the best.
I only love bbq more, The thai cooking uses similar spices to bbq especially with their hot chills but they also employ very pleasant herbs that enhance the cooking experience.
In the middle east everyone comes out in the evening because it cools down in this desert climate at night- and there are dozens of places that sell schwarma to go to
So back to schwarma which is a delicious marinated lamb dish. There seems to be an origin in diner kabob in turkey. I believe in going after the real thing. In highly tech Israel there is a rush on turkey schwarma which I really don't care for-I love Turkish Schwarma lamb.
How do you make schwarma at home ,it's not easy if you don't have a rotisserie like in the commercial places but the below recipes and marinades will be very similar. If you do get one you may as well open a small restaurant.
My favorite is to get the grilled lamb in a pita and put Tahini sauce and all kinds of salads cucumber,tomato,onion,and red pepper sauce,and finally add Turkish salad
I am an addict of Turkish pepper salad also known as salad Turkit and in Turkey the brand most common in Zergut. I'll eat a whole jar if you leave it near me just warning you.It is called to serve good appetizer and it consists of red peppers and onions and various spices and vinegar don't forget me to mention tomato paste also.
The blending of these different cultures and spices makes for very tasty chicken.

easy lamb Shwarma recipe
This is this recipe that I prepare in my frying pan because I don't have a rotisserie yet and it's easy to do what you'll need is the following:
One Teflon skillet
1 plastic large container or zip lock heavy duty plastic bag
Ingredients for lambs shwarma
2 pounds of lamb meat better cut into thin slices
the below ingredients will be used for the marinade.
one half of a cup of olive oil
2 cups of plain yogurt
1 tablespoon of garlic powder
1 tablespoon of onion powder
1 tablespoon of cinnamon
1 tablespoon of oregano
half a cup of lemon juice
3 tablespoons of orange juice
one half of a cup of apple cider vinegar
For the garnish the following slice tomatoes, sliced sweet onion, sliced sweet bell pepper and tahini sauce.
How to prepare
Mix all the ingredients together in a plastic container
place the thin cut pieces of lamb into the marinade close the container and put in the refrigerator for at least 8 hours.
Take out the thin slices of lamb and you can either grill it over the grill or heated in a Teflon frying pan where you have placed 2 tablespoons of olive oil to coat the frying pan.
Grilled lamb will be done in approximately 20 min. in the frying pan or on the grill check to make sure that the temperature has reached 160°F in the center of the lamb then it is well done
server the grilled lamb in pita bread which sliced sweet onions, tomatoes and tahini sauce, and sliced sweet bell peppers

I like the below video it is similar to the way I make my marinade for lamb schwarma but they are using chicken.
I like to use pitas that you can use as a pocket instead of a wrap there is less change of the pita falling apart.
